ONION, SCALLION, AND SHALLOT

Onions are a versatile vegetable used in endless recipes and dishes. With a strong flavor, they are a "must" when cooking. Home-grown onions taste great, and once you grow your own you will never want to buy them from the grocery store again. Start bulbs in early spring, as they are frost tolerant. Plant in full sun with well draining soil, and water regularly. With shallow roots, they need the soil kept moist, so they can get enough water. Once onions reach maturity their stems will turn brown around the bulb. Lay them out to cure before storing them. Some varieties store well for months and some are best eaten fresh.
